Rain or shine, we were determined to give Jackie and Nick the outdoor Spring wedding of their dreams, and the Grand Pavilion at Birch Hill Estate proved to be the perfect setting. After “I Do’s” under the roofed pavilion with a line of trees as a picture-worthy backup (mother nature takes all the credit there) the skies cleared enough for water-side portraits next to the willows before Jackie and Nick brought their infectious energy to the party. Their vision of casual elegance with straight-forward good BBQ, warm ambiance, and good music was brought to life in the Grand Pavilion and the dance party was one to top the charts here at Birch Hill. We wish you a lifetime of love and happiness…and endless ICE surprises!
Cocktail Hour: Cold Spring Bistro Display with assorted cheese and meat boards, vegetable crudite with house-made buttermilk ranch, fresh cut fruit platters, varietal salsas, guacamole, artisanal hummus, marinated pickles and olives, crackers, and pita breads
BBQ Buffet: Peach glazed BBQ chicken quarters; 24-hour smoked beef brisket; 4-cheese mac n’ cheese; Mashed potato bar with crumbled bacon, chives, sour cream, cheese, and gravy; corn on the cob (from right down the street!); cold pesto tortellini salad; and warm cornbread and rolls
Dessert: Lemon, chocolate, and vanilla cupcakes with assorted house-made trifles, jumbo cookies, and fudgy brownies
From our first meeting and tour of Birch Hill (which coincidentally was our ONLY venue tour/meeting), Nick and I both knew that Birch Hill was the place for us to get married. We both really appreciated that you didn’t pressure or push us to do anything that we didn’t want to do, or go with a more extravagant package than what we wanted or could afford. You understood from that first meeting what kind of wedding we wanted and envisioned and then you executed it to a T. Throughout our entire ceremony/reception both Sarah and Jordan were so attentive to Nick and I and really made sure that we were fed, watered and happy the entire night. Despite the rain and colder weather, things went off without a hitch and all of that credit goes to you guys. We have gotten so many texts and calls from people who are still RAVING about how good the food was, especially the brisket! When we first went to the bridal show last year, before we had decided to book with you, the food was really what blew us away and solidified our choice. We are big foodies and were so stoked at how good the food was for such a large group of people. Our highest compliments to your chefs!”

If you’re looking for even more reasons to plan an Upstate New York rustic Fall wedding, look no further for inspiration than Kara and Dylan’s Stablegate Farm wedding. Standing on the top of the Hudson 360 ceremony site, underneath a crisp blue sky and surrounded by the Catskill mountains painted with autumn leaves, Kara and Dylan tied the knot. With a count just a bit too large to fit inside the 1847 Dutch barn, they dined cocktail-style with loved ones under an airy and romantic sail-cloth tent then moved the dancing inside. It was the perfect flow between two lovely and romantic aesthetics, and the energy was magnetic the whole night. This unforgettable night ended with s’mores, cigars, and even pierogies by the fire.
Cocktail Hour: Hot Birch Hill Bistro Display with premium selections like crisp calamari salad with lemon-garlic aioli and warm Maryland crab dip with toast points. Butlered hors d’oeuvres like applewood bacon wrapped scallops, mini grilled cheese and tomato soup shooters, and steamed vegetable dumplings with scallion hoisin sauce.

“Where do I start? We were married Oct 5th at Stablegate. We worked with our bridal consultant for the 8 months of planning leading up to the wedding and we absolutely love her. She accommodated every request we made, made sure everything was the way we wanted, and helped us not only plan and execute our day, but helped us enjoy our day and celebrate, too. The food, ohhhhhhh the food. Received nothing but happy guests regarding the food, especially the hors d’oeuvres- everything was delicious. The venue was absolutely stunning. We had a large guest count so we ended up having dinner under a tent just outside the barn and dance floor, DJ, cake, cigar bar, etc. inside the barn, and I just loved it that much more. There was a quiet area for guests to escape to if they needed outside and inside the barn the party was raging. I cannot say enough good things about the whole crew we worked with. We truly had the most magical wedding all thanks to the team at Birch Hill & Stablegate!“

Ashley and Alex | Conservatory and Columbia Ballrooms | February 2nd, 2019
Snowmobiles, confetti, late-night pizza, and lots of love were just some of the memorable highlights from Alex and Ashley’s breathtaking winter wedding. Months of wishing for snow paid off, and they got married under the warm glow of the Conservatory chandelier with snow capped evergreens lining the atrium windows. Before making their way down the hall to reception in the Columbia Ballroom, guests stopped to snap selfies on top of the couple’s snowmobile photo booth and grab a sugar-rimmed champagne glass for toasts. The custom icy blue lights inside matched the icicles hanging from the patio windows, but between the outdoor firewall and inside fireplace lounge, there was warmth to be found everywhere. This is a winter wedding we’ll never forget! #Braap!
Cocktail hour: Warm Winter Bistro along with butlered hors d’oeuvres like grilled steak crostini with candied red onions and crumbled goat cheese
Plated Dinner: Sliced tenderloin with peppercorn demi-glaze, lobster ravioli with lobster cream sauce, parmesan roasted asparagus, and tri-color herb-roasted fingerling potatoes
Dessert: Classic vanilla with strawberry filling, assorted Italian pastries, and a gourmet hot chocolate bar

“I could not have asked for a better day/wedding.. truly the best day of my life. My husband and I couldn’t have picked a better venue or vendors. It was everything I pictured and more. I worked with Sarah who literally was AMAZING. Catered to everyone in the bridal party and also kept us in check which you 100 percent need when you have 20 people in your wedding party. The food was out of this world.. we went for the lobster ravioli and steak.. it was unbelievable and all my guests were happy. I wouldn’t change a thing. Wish I could go back in time!!!”
